A MUST STOP Place On Your Way To The Grand Canyon

We’ve all been to a winery. We’ve all been to a brewery. But who has been to a MEADERY before?! I know what you’re thinking….“A WHAT?!” People….a MEADERY! Mead is the fermentation of honey and water and it makes a glorious and delicious beverage. Do I have you hooked yet?!

M and I went down to Prescott a few weeks ago for a little “staycation” here in the great state of Arizona. I remember when we first started dating he was talking about Mead and how he had only had it once. I don’t know how, but somehow I stumbled upon the Superstition Meadery website (probably looking for places to eat) and I was sold. I knew we had to go there. We went to a cute local place for breakfast and talked over our game place. I had to google how far the meadery was because we were walking, and I was quickly embarrassed when I googled the same damn building we were in. It was in the suite next door. Round of applause for Kaylin? Thank you, thank you very much! *takes a bow*

We walked in and I was instantly in love. The vibe, the decor, the fact that I was going to be trying mead for the first time, all of it was so exciting. Guys, this is a must stop place.

Most people driving to the Grand Canyon come up from Phoenix and take it from me, you will want to detour over to Prescott! Not just for the Meadery, but the whole town is pretty damn adorable. You’ll thank me later. (I accept thanks in the form of craft beer or a trip to hawaii.) But head to this place and have a unique experience!

My favorite thing on the menu was, by far, the Blueberry Spaceship Cider. OH. MAAAHHHH. GOODNESS. Y’ALL. I could have sat there all day drinking that. But I didn’t. Because I’m a contributing member to society. And I had a hotel room waiting for me that I needed to check into. And we had a dinner date at 4. BUT OTHER THAN THAT I WOULD HAVE STAYED ALL DAY TO DRINK THAT!

I liked that they offered “flights” of the mead. If you’ve been to any type of place where they serve alcohol, you know what I’m talking about. If you’re the other 50% of my readers who don’t drink, I will post pictures below. (Even though i’m sure you haven’t read this far.) Okay, I digress. Like I said earlier, I have never tried mead. This was a good and entertaining way to try a little bit of everything. I recommend getting the flight. I really, really recommend it.

NoGii Product Review!

Do you love all things carbs and buttery, flakey, gluten(y) goodness?! Well, this post probably isn’t for you. But nonetheless, I do have to tell you about some of the most delicious treats on the market, whether you’re gluten free or not! Buckle up y’all, this is an exciting one! 

NoGii is a gluten free brand created by Elisabeth Hasselback. Pretty cool, right?! This isn’t just a person who created a brand because of the gluten free craze, she actually has celiac herself and has created a brand for people like herself! Where are my celiac peeps at?! 

Let’s rewind to the day I got this amazing package of products to review in the mail. Can you say “HOLY WOW”?!?! I was amazed at the amount of products! So beyond generous in my opinion!

Now if you know me, you know I love “bars”. (Is that a slang term? I’m just gonna roll with it.) I love being able to grab something on the go and feeling confident that I will always have a snack in my purse. I bring them to work in the morning, in the afternoons, on car rides, and pretty much everywhere in-between. Me being hungry is not a pretty sight. Just ask my husband. 😉

I have been trying to cut out gluten as much as physically possible so these delectable little treats make it really easy! (Ignore the pizza and cheesy bread I had for dinner tonight.) This whey & quinoa protein powder in my morning smoothies is AMAZING. I honestly didn’t even know they made protein powder with quinoa. Maybe i’m sheltered, maybe i’m not. Either way, I have found what I now use in each of my morning smoothies. 

My two favorite bars were the Cookies & Cream & the Peanut Butter and Caramel bar. It is truly a slice of heaven. Looking for a sweet treat that won’t make you feel terrible about yourself afterwards?! You need these in your life! Not to mention there are TONS of other flavors to choose from! Those are just two of my personal favorites! 🙂 

I know what you’re all wondering…”but how does it TASTE?!” I’m here to say i’ve had my fair share of gluten free foods, and this ranks at the top of the list. Seriously y’all, you won’t regret these.

Ginny Bakes: Review

{I was sent this product for review however all opinions are my own. Thank you Moms Meet and ginnybakes for this opportunity!}

I am by no means gluten-free, but I am wanting to attempt a 30 day “wheat free” diet. We’ll see how that goes. Nonetheless, my thoughts on gluten free food has always been the same. Boring, tasteless, weird textured foods. But alas, I have found something delicious!


I was sent this amazing box of treats. Yes, ALL of this. Four for you, ginnybakes. (And four for YOU if you get that reference)

Honestly, I wasn’t expecting things to taste that great. Haha. I know, I know, I’m a terrible human being. BUT I’m a sweets lover. I have high expectations. DON’T JUDGE ME.
My favorite thing so far as been the Coconut Oatmeal Cookies. And don’t tell anyone, but I think my husband even likes them too! 

I also made up a batch of the brownies. MMMM! MMM! So delicious. 

I was shocked at how much FLAVOR was in these bad boys! 

If you’re in the market for gluten free options, I would check out this company.

Fresh Quinoa Salad

Quinoa. Pronounced “KEEN-WA”. 
So good, so delicious, so amazing. 
My mom is a quinoa fanatic and puts this stuff on everything. Cereal, pancakes, salads…it’s seriously good on just about anything and everything! 
With, what I think is very little taste, and a tremendous amount of nutrients, Quinoa is the perfect little grain to add to your everyday pantry items! 

Last night I mixed together this amazing little salad for a side dish and it was delicious! 
So fresh and light, yet tasteful and amazing! 


Ingredients:
-1 1/2 Cups Cooked Quinoa
-1/2 Cucumber
-1/2 Red Onion
-1 Yellow Bell Pepper
-1 Green Bell Pepper
-Drizzle of EVOO

This salad is so simple to put together. 
First, cook your quinoa. I did this in my rice cooker which makes it super simple. 
Then, chop up all your veggies and add them to a bowl, mix, and enjoy! 

This salad can be so versatile! Other things that I think would work great in this salad are: olives, any kind of beans, tomatoes, avocado, etc. Really it’s up to you!

Best Brownies Ever

Have you ever had a recipe so amazing people know THAT dish? These brownies are THAT dish! 

On another note, have you ever had a piece of bake/cookware that you swear by? Because this brownies pan I use is the my holy grail kitchen item. But i’m getting off track here, onto the brownies! 

I’ve been making these brownies for as long as I can remember. (Okay, maybe just since I was like 13 and could bake on my own.) These are my go-to dessert.

Y’all, here are THE BEST BROWNIES EVER
The amazing pan I was raving about? Couldn’t tell you where it’s from or what brand it is, but BOY OH BOY is it amazing! I only use it for my brownies. Call me crazy, or call me genius. You pick. Either way, my method works. 
Alright, so let’s start the magic. Preheat the oven to 350 degrees. 

I usually use the stand mixer for this recipe, but baby girl was asleep when I was baking and I didn’t want to wake her, so hand mixing it was! Place all dry ingredients into a 
bowl, minus the sugar, and mix together until it looks like delicious hot cocoa mix. 

Next melt the butter. I only do mine so it is around this melted:

Cream the butter and sugar together if you’re using your stand mixer, or mix together by hand. Then add the eggs and vanilla. {Fun fact? My momma always told me to add one extra teaspoon of vanilla more than what it calls for. Try it. You won’t be disappointed.}
Also, when you hand mix this stuff together, it looks terrible. Don’t give up, it gets better. 

Ready for it to start getting pretty? Mix these two concoctions together. Go on with your bad self, mix. CREATE MAGIC! 

At this point, go ahead and stop to take a lick or two of the spoon. I know you want it. It’s okay, this is a judgement free zone. Go ahead…i’ll wait….

Now pour the batter into a GREASED pan. Don’t forget to grease it. You do not want brownies stuck to the pan. That would just be an uncalled for and totally avoidable travesty. 

Bake for 30 mins or until a toothpick comes out clean when inserted into the middle. 
Take out and let cool until devouring enjoying. Or don’t let cool, scoop some ice-cream on top, and sit back and enjoy a little piece of heaven. 

My heaven? These pieces. The corners. 


Ingredients:
1 Cup Butter (Melted)                 1 Cup Flour
2 Cups Sugar                               1/2 Teaspoon Baking Powder
2 Teaspoons Vanilla                    1/4 Teaspoon Salt
4 Eggs                                          Optional Nuts
3/4 Cups Cocoa Powder

Directions:
1. Preheat oven to 350 degrees
2. Whisk flour, cocoa powder, baking powder and salt together in a bowl.
3. In a stand mixer, or by hand, cream butter and sugar together. Then slowly add eggs, one add a time. Add in vanilla and mix well
4. Place dry ingredients in with the wet, and mix until fully incorporated
5. Pour batter into a greased 13X9 pan
6. Bake for 30 mins or until toothpick comes out clean when inserted into the middle
7. Enjoy the heck out of your brownies and share with absolutely no one
8. Kidding, share with everyone you know

There you have it folks, the greatest brownie recipe you will ever need in your life. Make them for your neighbors. Make them for your mother-in-law. Make them for your best friends husbands cousin. Just make them, enjoy them, thank me later.

Chicken Thai Chopped Salad

A few days ago I had found this recipe on Pinterest and I couldn’t stop thinking about it. 
I knew I had to make this delectable looking salad. Y’all, this Chicken Thai Chopped Salad was so good I made it two days in a row. Ya, it was THAT good. I made mine a little different from the original recipe, but here is mine! 

Chicken Thai Chopped Salad

Ingredients:

For the Dressing:
-2 Cloves Garlic – Minced 
-1 Palmful Crushed Red Chili Flakes (more or less depending on how spicy you like it)
-2 Tablespoons Soy Sauce
-1 Tablespoon White Vinegar
-1 Tablespoon Red Wine Vinegar
-1 Tablespoon Lime Juice
-1 Tablespoon EVOO (Extra Virgin Olive Oil) 
-2 Tablespoons Sugar 
-1/4 Cup Peanut Butter
-1/4 Cup Water

Whisk all ingredients together in a bowl. I like to do this first before starting the salad so all the ingredients can marinade together and infuse flavors. 


For the Salad:
-1 Small Head of Cabbage
-2 Large Carrots
-1 Handful of Cilantro
-1 Cup Peanuts
-2 Green Onions
-2 Cooked Chicken Breasts 
-Salt and Pepper to Taste

First, boil your chicken in water on the stove for about 20 mins or until cooked. I cover mine and cook on medium high heat. 

Next slice the cabbage into thin strips as if you were making coleslaw. 

Shred the carrots anyway you would like. I did long strips and then did a rough chop with them. I used a vegetable peeler for this, but use what is best for you. 

Rough chop the green onions, cilantro, and peanuts. 

Once the chicken is fully cooked, let it cool and then shred it into bite sized pieces. 

You’re going to want to find a big bowl, and toss all these amazing ingredients together. Once you’ve given it a good toss, go ahead and drizzle that dressing you’ve been letting sit all over it, and toss a few more times. 

Let it chill in the fridge for 30 mins or so, a presto! One of the best salads EVER! 

This Chicken Thai Chopped salad is literally one of the most delicious things i’ve ever eaten. The hubs and I drizzled a little Siracha over ours and it was DEVINE!
